BIVE, founded a year ago by Carla Noboa, is a health-forward vegan ice cream company located on the Lower East Side.
Noboa, who has a background in business and nutrition, spent a long time perfecting the 100% plant-based, low-sugar “ice cream with purpose” before opening BIVE’s scoop shop at 95 Orchard St.
We stopped by BIVE, which stands for “Balance + Vitality,” on a chilly day last week and were instantly charmed by the colorful shop and its lively music.
We were also pleased to meet Yasmeen Copelin, the pastry chef who makes all of BIVE’s ice cream and is responsible for creating Cookie Dough, their only gluten-free flavor. Copelin told us that after graduating from culinary school in 2015, she decided to take a break from the food world to be a fairy godmother in Disney World’s Bippity Boppity Boutique. After the novelty wore off, she found that she was miserable not working with food and eagerly came aboard as Noboa’s ice cream-making partner-in-crime
Since opening, BIVE has expanded from offering 7 signature flavors to approximately 13. Everything they serve is packed with superfoods, yet tastes indulgent and delicious. For example, Boost Me Up fuels with passion fruit, collagen, chia seeds, coconut water and amaranth, while Keep Me Strong provides vitality with the aid of echinacea and soursop.
BIVE also uses valerian root, one of nature’s greatest natural sedatives. The herb is the star of their popular flavor, Soothe Me Up, which also boasts toasted coconut and semi-sweet chocolate chips. “Valerian targets your nervous system, so a lot of people who have insomnia or are having a stressed day, it might take a little bit more time, but they start feeling it,” Carla explained in an interview with amNewYork. The flavor is touted as a great pre-bed treat.
Because we’re heathens, we started off our ice cream spree by tasting each of the flavors. (Word to the wise: the sampler is available for $3). We were especially taken with the Lavender Melatonin, which supposedly knocks you out if consumed before bed, and Keep Me Balanced, which has real sparkles in it. In the end, we settled on a lavender cone piled high with Soothe Me Up, and a matcha cone filled with Pick Me Up, which also doubles as a perfect post-workout reward.
If you like cones, you’ll be delighted to know that all of BIVE’s come from The Konery, which makes crisp, beautiful waffle cones without eggs, dairy, or preservatives. We especially loved that we could see real buds in the lavender cone.
